Honey Joy Nut Bars
Every bite will take you back to childhood parties, aghhhh honey joys! These bars are full of good fats which we need to eat more of to reduce heart disease, diabetes & reduce any inflammation in the body. Being loaded with nuts & seeds also means they’re loaded with protein, which will help to keep you fuller for longer.
The key to improving your gut health & therefore overall health is diversity! Get as many different nuts & seeds into these as you can. This will allow for different textures & different nutrients. I highly recommend a variety of nuts & seeds for those trying to fall pregnant.
A lot of the nut bars available at the supermarket are loaded with additives & emulsifiers…not these, the simplest of ingredients & highly nutritious. A homemade version of store-bought KIND bars.
Make a batch at the start of the week to have as on-the-go snacks!

Honey Joy Nut Bars
Ingredients
- 3 cups of your favourite Nuts/seeds
- 1/2 cup Dessicated Coconut
- 1/4 tsp Salt
- 1/3 cup Honey
- 2 Tbsp Maple Syrup
- 2 tsp Vanilla
Instructions
- Preheat oven to 180C
- Roughly chop nuts slightly (this step is optional for good for texture)
- In a bowl, mix together nuts/seeds, coconut & salt
- In a saucepan over a medium to low heat, add maple syrup & honey, stirring to combine. This will only take 1-2 minutes, watch carefully it doesn’t start to caramelise or burn
- Remove from heat & stir through vanilla
- Pour warmed liquid into nut mix & stir until well combined & everything is well coated
- Pour into a lined baking tray & push down firmly, then bake for 20-30 mins (20 for chewy & 30 for crunchy)
- Remove from oven & allow to cool for about 60 mins before cutting into bars, enjoy!
